12 Recipe Ideas to Make for Dinner Tonight

It’s the weekend, and it’s almost summer so the days are getting longer. Now might be the perfect time to make a few new recipes because it feels like there’s more time in each day, and meals are a bit more relaxed.

If you’re looking for a few new recipe ideas to try I’ve put together a list of 12 ideas you might like to make for dinner tonight. Who knows, maybe you might find something you really love and always wanted to make from this list.

12 Ideas for Dinner Tonight

1. Homemade pizza

You can make the bases from scratch like I did here, or use Lebanese bread to make dinner much faster.

2. Casserole

Sometimes it’s a can of tomatoes that can lead to a simple recipe. In a casserole everything just goes into the dish and let it cook in the oven for a couple of hours. It’s an easy no fuss recipe idea. And if you have leftovers, try my casserole pie idea.

3. Salad

Salads are easy to make, and you can use whatever you have in your kitchen cupboard and fridge. There’s a few pointers I’ve outlined to making salads in my Mix and Match Salads post, and more ideas in the Textured Salads post too.

4. Gnocchi

Gnocchi is similar to pasta but is actually made out of potatoes. I love the simplicity of a gnocchi dinner, so try out some of the ideas I had for having gnocchi for dinner. I promise you that gnocchi is one of the fastest mid week meals you can make.

5. Kebab sticks

Kebabs sticks are the easiest to put together, with just about anything being able to go on the sticks. Cut up chicken or beef or lamb into strips and thread them onto the wooden sticks (soak the sticks in water for 30 mins first so they don’t burn when you cook them). Add in some chopped vegetables and brush over some herbs and spices mixed with oil and you’re ready to cook them. 6. Fritters

Fritters are great to have with dinner, or you can even have them for breakfast and lunch. For dinner time fritters make sure you serve them with something a little bigger to make you feel more satisfied, such as some sliced beef or chicken, or with a piece of grilled fish on the side.

7. Rice pilaf

Rice pilaf is pretty easy to make. Just add some vegetables to the rice and cook with some herbs and spices. Check out how to make a rice pilaf in the pressure cooker in only 5 minutes.

8. Roast dinner

Making a roast for dinner is a great idea, especially as it’s one of those meals where you can cook once, eat twice. In this post on Simple Recipes I found a recipe for roast beef, and another for roast chicken that don’t need too many ingredients. 9. Pastillas

Pastillas are basically cigar shaped pieces of filo pastry that are wrapped around a flavourful combination of couscous and lamb mince. They are an incredibly tasty mix of sweet and savoury and are totally worth taking the time to make.

10. Argentinian lamb chops

Jamie Oliver has given me plenty of inspiration over the years, but even he gets inspiration from his friends. I made these lamb chops (as lamb cutlets) during the Soccer World Cup last year and my husband really loved them. Hopefully you do too.

11. Grilled chicken

12. Jaffles or Toasted sandwiches

Some nights you want something simple, and making a jaffle (toasted sandwich) is a pretty easy dinner. You could take it up a notch and make it a little bit more exciting, like Reynold did during Masterchef this year. Or check out some of the other interesting things you could make in your jaffle iron or sandwich maker too (think outside the box on this one).

With these suggestions, hopefully you can come up with something tasty for tonight. And if after all that you just can’t be bothered, then don’t stress, I have nights like that too, and here’s the proof.
